Shio Koji: Artisanal Fermentation

We are the only local Shio Koji maker in the the greater New York City area.  Our product is an artisanally handcrafted work of fermentation, made with special koji culture from a 300-year-old company in Japan. 

Ingredients: Water, cultured rice, salt.
